Candice Philip – who spent 13 years working under celebrated British chef Luke Dale-Roberts at X, which Grei replaces – favours a minimal, sophisticated approach to plating that owes more than a nod to New Nordic cuisine.
New six-course tasting menus evolve regularly but may include the likes of springbok with pearls of caviar and buck leaf sorrel, and sweetbreads with scallop and pungent wild garlic. Most dishes are fragrant with herbs grown in the hotel’s own flourishing rooftop garden.
